Camp Quesadilla
Super quick! Super easy! Super yummy! This recipe is for making the quesadilla in a pan on a camp stove. Alternatively, you can throw the tortilla on a grate on a low-burning fire, or prepare the tortilla with cheese and veggies, fold it, wrap in foil and put it on the coals - cook for 5 minutes.

  • .5 tbs Oil Not really necessary, but oil gives more crisp.
  • .5-1 cup Cheese Almost any kind will do. Cheddar or parmesan travels well.
  • Avocado, tomato, protein Whatever you have in your panniers. This is a great use of leftovers.
  • 1 Tortilla

Instructions
  1. Heat oil in frying pan on medium heat
  2. Place tortilla in pan, in reduce heat to medium-low
  3. Fry on one side of tortilla until done to your liking, then turn over add thin layer of cheese
  4. Cook until cheese melts. Add optional ingredients on one side of tortilla
  5. Fold tortilla in half, remove from the pan, and cut into wedges. Enjoy!
