Protein Punch! Couscous with Tofu and Veggies
You can buy baked tofu, or tofu jerky in most grocery or specialty stores. Couscous is also a good source of protein, and the sky is the limit with what you can add to this easy dish.

Ingredients
  • .5 cup Dried couscous
  • 1 cup water
  • 1 oz Tofu slices Pre-baked or jerky
  • 2 tbs raisins or dried cherries
  • 1 cup Vegetables Broccoli, cauliflower, zucchini, carrots...
  • 2 tbs Almonds Slivery almonds are nice in this dish, but use what you have.

Ingredients
  • .5 cup Dried couscous
  • 1 cup water
  • 1 oz Tofu slices Pre-baked or jerky
  • 2 tbs raisins or dried cherries
  • 1 cup Vegetables Broccoli, cauliflower, zucchini, carrots...
  • 2 tbs Almonds Slivery almonds are nice in this dish, but use what you have.
Instructions
  1. Chop the veggies julienne style.
  2. Sauté veggies in oil for 5 minutes and set aside, covered if possible.
  3. Prepare couscous by boiling water, add couscous and let sit covered for 5-7 minutes.
  4. Combine cooked couscous, veggies, tofu and raisins. Top with almonds. Enjoy!

This is one of my favorite brands of baked tofu. Travels well!
